On the first Sunday of the month, we break our Fast Sunday* with homemade pizza. It used to be Hawaiian pizza...but for the past several months, we've done a gourmet veggie pizza instead. I thought I'd show you how we do it...

The dough preparation is the longest part. I know I've been promising to share my pizza crust recipe...and I promise, I will. I just need to remember to take some pics to accompany it. Then I'll do a separate post.

First, we saute some onions and garlic...

So much for step by step instructions...I already forgot to take pics of the sauce and mushrooms. Oh well, you get the idea. Doesn't this look awesome?

Then we add some peppers. (Hopefully they don't cost $6 a lb. where you live.)

Then we add some fresh, roma tomatoes.

Oops...I forgot to take a pic of the artichoke hearts before the cheese...so had to stop here.

Then we cover it all with cheese (except my part).

OK, here's the yummiest part. I cooked the pizza at 400 for 15 minutes, then took it out of the oven and put all this sliced avocado on it and cooked it for the remaining 5 minutes. It was to.die.for!

This is what I'M talkin' about!

And everyone is happy. Even the ones who are like, "Take the dang picture so we can eat already." They are happy on the inside. At least they are about to be.
I promise pizza dough instructions next week.
*members of the LDS church are encouraged to fast for 24 hours the first Sunday of every month (typically after dinner on Saturday until dinner time on Sunday). This is used as a time to reflect and seek answers to prayer, as the deprivation is believed to make one more spiritually receptive. The money saved by not eating these two meals is donated to the needy.
